Ingredients :
- ½ cup gram flour
- 1 tbsp. semolina or ground Rice
- ½ tsp. Onion seeds
- 1 tsp. Cumin seeds
- ½ tsp. Fennel seeds or aniseeds
- 1 tsp. hot chilli powder
- ½ tsp. salt or to taste
- 1 large Aubergine (eggplant)
- Vegetable oil for deep frying
How to Make Crisp Fried Aubergine :
- Sift the gram flour into a large mixing bowl and add the semolina or ground rice with the onion and cumin seed, fennel or aniseeds, and the hot chilli powder and salt.
- Halve the aubergine lengthways and cut each half into 1 inch thick slices.
- Rinse them and shake off the excess water, but do not pat dry.
- With some of the water still clinging to the slices, add them to the spiced gram flour mixture.
- Toss them around until they are evenly coated with the flour.
- Use a spoon if necessary to ensure that all the flour is used.
- Heat the oil in a wok. Fry the spiced aubergine slices in a single layer.
- Avoid overcrowding pan as this will lower the oil temperature, resulting in a soggy texture.
- Fry until the aubergines are crisp and well browned.
- Drain on kitchen paper and serve with a chutney.
