Ingredients :
  • cup gram flour
  • 1 tbsp. semolina or ground Rice
  • tsp. Onion seeds
  • 1 tsp. Cumin seeds
  • tsp. Fennel seeds or aniseeds
  • 1 tsp. hot chilli powder
  • tsp. salt or to taste
  • 1 large Aubergine (eggplant)
  • Vegetable oil for deep frying

How to Make Crisp Fried Aubergine :
  1. Sift the gram flour into a large mixing bowl and add the semolina or ground rice with the onion and cumin seed, fennel or aniseeds, and the hot chilli powder and salt.
  2. Halve the aubergine lengthways and cut each half into 1 inch thick slices.
  3. Rinse them and shake off the excess water, but do not pat dry.
  4. With some of the water still clinging to the slices, add them to the spiced gram flour mixture.
  5. Toss them around until they are evenly coated with the flour.
  6. Use a spoon if necessary to ensure that all the flour is used.
  7. Heat the oil in a wok. Fry the spiced aubergine slices in a single layer.
  8. Avoid overcrowding pan as this will lower the oil temperature, resulting in a soggy texture.
  9. Fry until the aubergines are crisp and well browned.
  10. Drain on kitchen paper and serve with a chutney.
